Adapted from Eileen Goltz, CuisinebyEileen.com A healthy entree salad adapted from the Pear Bureau Northwest website– supplies healthy fats and an array of plant nutrients. Ingredients: 3 tablespoons mayonnaise Directions: Whisk mayonnaise, olive oil, lemon juice, garlic, salt and pepper in a small bowl until blended. In large bowl combine the tuna, carrots, onion, red pepper and basil. Add the mayonnaise mixture and toss gently to combine. Gently stir in the pear.* Place the salad greens in a large salad bowl and spoon the pear and tuna mixture on top. Toss to combine. Notes: Serves 6. *can also be placed beside the tuna mixture.
